Bakery Oven Loaf Temperature

This animation shows the temperature experienced by a row of tins containing bread loaves as they are baked in a commercial bread oven. Included in the CFD model is the heating and cooking process of the bread dough.

This work was carried out through the CRC for International Food Manufacture and Packaging Science in collaboration with a large Australian food company and Food Science Australia.
